手工採收，手工選果後全數除梗，移轉到發酵槽。進行6~7天冷浸泡，5~7天的發酵，10~14天的發酵後浸泡。橡木桶培養12個月，全數來自法國，多種尺寸，30%的新桶比例。​裝瓶前不澄清，輕微過濾。
